Healthy Food for Kids on the Road

We recently took a road trip for Mother’s Day. While I try to feed my three kids healthy food whenever possible, it’s always a challenge doing that while on the move. The ease and speed of fast-food meals can be oh so tempting. This time, though, I managed to (mostly) feed my twin 1-year-olds and my four-year-old daughter healthy food for the road trip.This was a bit of a last-minute trip, so I hadn’t had much chance to plan for the healthy eating. Some of it was made possible by a rushed whole food grocery store trip, and the rest was some serendipity at our destination. I left work about an hour early to hit the grocery store and load up on fresh produce and healthy snacks. I also bought some cute kids’ flip-open food containers.
That night, after the kids went to bed, I packed up the cooler and food bag with single-serving sizes of:
Canteloupe that I scooped into finger-food size with a melon baller
Diced sweet potato (which I happened to find pre-diced in the store, and boiled at home for 10 minutes so the babies could eat it directly.)
Diced cheddar cheese
Organic graham cracker bunnies
Cheerios
It probably took me a total of 45 minutes to package, cook, dice and otherwise prepare the healthy foods for the kids. They snacked on those in the road and while we were there.
After we arrived in a very small mountain resort town, I was concerned about what healthy food we might find. It probably helped that there wasn’t a fast food restaurant in town (in fact, I checked with my GPS unit, and the nearest one was in another state). We went into an outfitter, of all places, that had a small grocery section. There, I was able to find organic yogurt and fresh avocado for snacks, as well as the makings of a pasta dish with fresh, ripe tomatoes that I cooked at our cabin rental.
